While cooking an onion sauce the most important thing you have to consider is to not burn your onions ! It can happen very easily, especially when the heat is too strong. The good news is you don’t need much ingredients, the bad one: you need to be patient :-).
For an half chicken, you will need:
- 1 kg white onions
- 1 tsp green paste
- Salt, pepper, chili
- Vegetal oil
- Fine herbs
Chop the onions and fry them at a very low heat. Turn continuously or with small breaks. After ca. 30 minutes the onions must have turned from transparent to golden brown (not burned!). Then add your spices and end with the fine herbs before turning off the cooker.
Serve warm with grilled chicken and white basmati rice (or whatever you like). Enjoy!
